I've been thinking of this a lot of times, and a trilogy covering all the important stories of the Silmarillion seems to be perfeclty possible, but unlikely.
In the second film, we can have the story of Beren and Luthien. A film focused specially in men (Húrin and Beren, basically), after the first one, focused in elves, and concretely the Noldor.
It can be started with the third great war (the Glourius one) as introduction, a war for Melkor to measure Noldor forces. Splendor of the kings of the elves (Gondolin, Nargothrond are built after Ulmo's orders in dreams, and Doriath is protected by her Girdle). Finrod get on well with Barahir's house, the elf talks to Galadriel in Nargothrond, with Thingol in Doriath... Prosperity. Everything very cool until now.
But Morgoth attacks in the Sudden Flame Battle. Dorhonion falls, elves kingdoms of the north are defeated and all of them have to retreat, Finrod is rescued by Barahir (we can include Beren in the rescue), Curufin and Celegorm hide in Nargothrond. Maedhros fights bravely but has to retreat.
Fingolfin, in anger an desolation rides his horse and duel Morgoth in an grandiose combat. He dies but hurts the Vala.
Morwen, of the house of Beor (that should appear before with Barahir and Beren, waring loyalty to Finrod, for example, just to fix her better in the film), escapes with other women and children from Dorhinion. Húrin and Tuor get alone from their army, they are helped by the Eagles and get to Gondolin, when they are for a while an then continue their fighting.
Barahir recieves Finrod's ring in reward. Beren, his father and a few live as outlaws, Barahir is betrayed and dies. Beren is the only one who scapes, he fight with the spiders and arrives to Doriath. All the story of Beren and Luthien, mixed in paralell with some scenes of Húrin, his marriage with Morwen, and the story of both (briefly) until Túrin is born... and finish when Beren dies.
Then, the action focuses in Maedhros and his rejoining army of elves, men and dwarfs for the last great battle. Húrin appears again in the battle, he helps Turgon to escape, his brother dies and he is taken captive. Some talk about being Gondolin the last hope of men and elves before the end.
As epilogue, and to make the ending not absolutly sad, make a last scene with Luthien in the Halls of Mandos, crying and singing the Vala. She meets Beren again and she is to choose between inmortal life in Valinor without Beren or returning to ME like as a mortal. Final shot of the couple living a normal life in a house very far away from the war.
I think it could be a great three-hours film.
